Carrot Cake Recipe

  • Ingredients:

4 eggs

1 1/2  cups vegetable oil

2 cups all-purpose flour

2 cups sugar

2 teaspoons baking powder

2 teaspoons baking soda

2 teaspoons ground cinnamon

1/4  teaspoon salt

3 cups shredded carrots

1 1/2  cups coarsely chopped pecans or walnuts (optional)

cream cheese frosting (recipe below)

  • Instructions:

Preheat oven to 350 degrees. Grease bottom and sides of 13 x 9-inch baking pan. Beat eggs and oil in a small bowl. Combine flour, sugar, baking powder, baking soda, cinnamon, and salt in a large bowl. Add egg mixture; mix well. Stir in carrots and pecans. Pour into prepared pan. Bake for 30 to 35 minutes or until test-toothpick inserted into center comes out clean. Cool cake completely in pan on wire rack. Loosen edges and invert cake onto cake plate. Prepare icing. Spread over cooled cake.

  • Cream Cheese Frosting:

1 package cream cheese, softened

1/2  cup margarine or butter softened

1 teaspoon vanilla

4 cups powdered sugar
